I have a passion for food and health. Four and a half years ago I opened my cafe “Revive” so people could find good, healthy food in the city. And now I have two cafés.
Most cafés are full of muffins, Panini’s, deep fried items, unhealthy sweets and beverages. We wonder why so many people have health issues and do not feel good all the time. It is because we feed our body junk. It is possible to make good healthy food easily and inexpensively. It is just learning the skills to do it.
During my time at Revive we have developed some great tasting vegetarian dishes that are very popular. Ironically, 80% of the people that come to Revive are not vegetarian. They are people who know they want to eat healthier.
In a course running over three Monday evenings in June, I will share with you some of Revive’s secret recipes. These are the dishes people love. The embarrassing part is that some of these popular dishes are actually very simple to make. I am by nature a “lazy” chef. While I like cooking, I like it to be quick. I do not have time for twenty different ingredients, and complicated oven and mixing manoeuvres. Also in the commercial café world, if recipes are too complicated they increase wage costs and also the skill levels of staff needed. With this philosophy at Revive, I have developed many dishes that are not only quick, but are healthy and do taste good.
Some of the dishes we will reveal include a Tuscan Frittata, Spinach and Pumpkin Cannelloni, a great Caesar salad, Hungarian Goulash, plus some of our popular salad recipes. Did you know that there is one ingredient that if we add to a rice or noodle salad that it doubles the sales? I will also show you how to make an awesome Thai Curry - you can get 95% the result of an experienced Thai chef with a couple of very inexpensive ingredients and a base recipe - without the shrimp paste and oyster sauce. Whole-grains and a protein are combined in most recipes, which forms a whole protein and fills you up. Some vegetarian dishes do not do this and people do not feel satisfied and end up overloading on carbs.
My co-presenter Food TV addict, Richard Harman, will also share the traditional ways to make similar dishes, and add some fun to the experience too.
